Blistered Bean Salad

Fresh produce is the star of this vibrant seasonal salad. Crisp green beans — blistered in a sizzling pan — come together with sliced avocado and shallots, julienned radishes, peppery arugula greens, and a simple dressing of lemon and avocado oil. Now, for the final plating touch: Stir our house-made Chili Garlic Oil into creamy Greek yogurt and serve alongside the bean salad for an extra dose of brightness and spice. INGREDIENTS

Serves: 2 - 4 Guests

–  .35 oz Emma’s Provisions Chili Garlic Oil

–  2 oz of Greek yogurt

–  8 oz fresh green beans

–  1 radish, fine julienne

–  1 oz toasted seed mix of hemp hearts, sesame and poppy seeds

–  2 oz arugula

–  1 avocado, halved and sliced with spoon

–  1 shallot, cut into rings

–  Lemon quarter

–  ½ oz avocado or sunflower seed oil


INSTRUCTIONS

Place cast iron pan on medium heat and add shaved broccoli, evenly distributing it in the pan. Stir frequently until broccoli has some darker brown colors. Turn off heat and add honey, allowing it to bubble and boil. Add remaining ingredients and mix well before serving.
