Discover the magnificent flavor packed in conservas (or “tinned seafood”). Conservas are commonly found at a tapas bar or restaurant in Spain, and made using only high-quality ingredients. The day starts with a short documentary, a lesson from an expert, and ends with a tasting.

Pablo Gómez will be our expert of the day. He is the executive chef and owner of El Chipíron, dedicated to using Spanish ingredients and traditions with a modern spin. Pablo has a culinary enthusiasm that has led him to apprentice under renowned chefs, study at one of the most prestigious culinary schools in Madrid and work at award-winning restaurants in Spain. We’re delighted to have him talk all about the possibilities and new uses for conservas.

Larder and Sternewirth will be carrying tapas and dishes specifically designed to highlight this exclusive ingredient. Or find a seat at Supper’s table to experience Chef John Brand’s creative uses of conservas in a la carte dishes on the lunch and dinner menus, available all week long.
