Jamón is an exemplary flavor of Spain. It’s a local tradition, and treasured by everyone in Spain. Discover the process and celebrate the noble Spanish pig. The day starts with a short documentary, a lesson from an expert and a tasting – all devoted to jamón.

Mario Hiraldo Regalado will be our expert of the day. He’s the Master Carver and Ham Controller at Brindisa Ltd., and has over 17 years of experience in all things Ibérico. Mario is an ambassador of technique and quality, and we’re elated to have him as part of our monograph series.

Larder and Sternewirth will be carrying featuring tapas and dishes specifically designed to highlight the deep flavor of Spanish jamón. Or find a seat at Supper’s table to experience Chef John Brand’s inspired approach to this ingredient.
